This position is responsible for the successful culinary operation/operations under the direction of the Campus Dining Director. Serves as the head for culinary operations in assigned areas with duties that include the food production of student/faculty meals, guest/employee retail operations and catering functions. Adheres to HACCP guidelines to ensure efficient, safe and sanitary food production preparation and presentation. Specific responsibilities and duties also include: menu development, inventory, ordering/purchasing, food cost controls, training, sanitation, and personnel management to include hiring, counseling, coaching, and developing. Ensures that all kitchens provide nutritious, safe eye-appealing and properly flavored foods and that menus, production methods, and service meet federal state and district standards.


Typical Essential Functions

Develop, implement, and maintain a standardized recipe system for all production items. Track production costs and quantities and oversee pre and post costing of menus.

Plan, coordinate, and manage training of production staff in assigned areas. Present seasonal ideas to various outlets in a timely manner.

Develop quality control standards and guidelines for production and line staff to follow.

Responsible for maintaining internal-control procedures to adequately control food costs.

Monitor customer feedback and make menu adjustments if/when necessary.

Research and develop new food items to ensure customer interest and excitement is maintained while supporting a diverse ethnic environment.

Develop menus from customer demand and oversee daily production activity.

Coordinate appropriate safety training and documentation for production staff.

Assist in the production and support areas as necessary, which may require functioning in an active cooking or production capacity for all or part of a normal shift. Includes quality assurance and transportation of food products to catered events.

Participate in the interviewing of job applicants and the development of recommendations regarding the hiring of new employees.

Responsible for seeing that all necessary reports and hiring paperwork is completed accurately and submitted in a timely manner.

Perform critical food service duties as required to ensure proper food storage and rotation, as well as maintain a safe working environment.


Requirements

Equivalent to an A.A. degree in Culinary Arts from an accredited school and five years of high volume food service experience, including at least three years of hands-on experience and two years of production supervisory experience required (university or college catering experience preferred). Certification as a Certified Working Chef preferred. Must have a wide knowledge of the principles, techniques, terminology, and procedures of volume food production. Must know marketing basics and have excellent personnel and time management skills. Competence in classical and international cuisines. Have excellent supervisory skills and train/motivate employees. Must be competent with operating computers, calculators, ovens, mixers, fryers, steam kettles, steamers, scales, measuring devices, slicers, and food processors. Requires excellent customer relations, menu planning, cooking, and baking. Must possess a valid California driver’s license and have an acceptable driving record. Become ServSafe certified within first year of service and maintain certification as required. Must have regular full time attendance.
